Our Washed Bufarolo comes to us from buffalo milk innovators Quattro Portoni in Bergamo, Italy. We then wash it in beer from Transmitter Brewing and age it for 6-8 weeks to produce a mushroomy, meaty taleggio-style that is welcoming and approachable. This cheese is incredibly versatile in its applications and pairings - Bufarolo does just as well with chocolate as it does with Negronis. It’s also a Crown Finish Caves staff favorite.
