Coppa is a traditional pork salume made from the muscle running from the pig's neck to the fourth or fifth rib. It is a whole-muscle salume, dry cured and made using one of the most prized part of the pig. Capocollo is lightly marbled with fat and salted on wooden boards. It is then rinsed and seasoned with wild-fennel seeds and flowers, giving it the name of “finocchiata” in the Tuscan region where Filippo makes his salumi. The meat is then aged to give it its unique tenderness and taste.
