Happy Valley Meat Co. purchases whole animals from farmers, works with small-scale processors to portion our meat, and sells every single part of the animal to people who want it.
For every animal, there’s over 200 lbs of ground beef made while there’s just 10 lbs of filet mignon and only 1 lb of that coveted hanger steak. Small farmers need to move ground beef otherwise they can't justify selling more steaks and harvesting more animals. If they can't bring in more animals, they can't survive.
