The incomparable Barnburner. Made with thermized cow’s milk at Grafton Village Cheese Company in Vermont, our Barnburner cheese is a lightly smoked comfort. A cheddar-style that is familiar and yet new. Tune out and dig in to this meaty masterpiece. Cold smoked for 2 hours at Grafton, bandaged and larded with lard courtesy of our friends at Marlow & Daughter’s, and aged for 4+ months. Barnburner is best paired with avoiding the news for 2 hours and just chilling the heck out with some darn saltines. We owe that brilliant orange color to the annatto and we hope it brings some brightness into your home.
