Paesano Organic Extra Virgin Olive Oil is made by the Asaro family entirely from Nocellara del Belice olives from their estate in the Valle del Belice in western Sicily.
It is emerald green, very creamy and intensely fruity with no bitterness and a lingering finish reminiscent of artichokes. The aroma of this oil suggests an intense oil, but the taste is not harsh at all, and it is devoid of any bitterness. It is sweet, delicate and lovely. This monocultivar when cured for table olives is called Castelvetrano, named for the major city in the Valle del Belice.

Asaro produces several olive oils in their frantoio in Partana, including a non-organic version of Paesano, in our opinion this Paesano Organic is one of their best, and it is the only one that is completely estate grown.
This oil has very wide application as a finishing oil. It is a perfect oil for fish and for fresh tomatoes - don't cook too aggressively with it, as it's best savored on its own.
